CUCUMBER, TOMATO, AND RED ONION SALAD

During the summertime, I always try to use the kitchen appliances as little as possible. During a hot summer day, starting up the oven or stove creates way too much heat in the household for my liking. This salad is a very easy to prepare dish that doesn’t require cooking anything! When choosing cucumbers, look for firm, well-shaped cucumbers with dark green color. To store them properly, refrigerate them in a plastic bag for up to one week.

Ingredients:

Salad:

• 4 large tomatoes, cubed

• 1 large cucumber, chopped

• 1 cup red onion, chopped

• 1 cup green pepper, chopped

• 1/3 cup parsley, chopped

Dressing:

• 1/3 cup apple cider vinegar

• 1 tablespoon olive oil

• 2 cloves garlic, minced

• ½ teaspoon salt

• ½ teaspoon ground black pepper

• ½ teaspoon sugar

Instructions:

1. In a large bowl, combine the salad ingredients.

2. In a small bowl, mix the dressing ingredients together.

3. Pour the dressing over the salad. Mix well.

4. Refrigerate for at least 1 hour before serving.
