Cooking class teaches healthy tricks

Last week the Mohawk Council of Akwesasne’s Community Health Program hosted a cooking session and luncheon for any interested community members. The idea of the event was to teach individuals how to make a meal that was a healthy alternative to something they might normally cook.

On the menu for the Wednesday event was “Easy On Ya Lasagna.” A kitchen full of participants at the St. Regis Recreation learned how to make the popular lasagna meal without significantly fewer calories.

The main ingredient switch in the healthy lasagna was in the “ground round.” While lasagna often has greasy, calorie-filled hamburger, the Easy On Ya Lasagna uses a meatless ground round made by Yves. It tastes just like hamburger but is made primarily of soy and wheat.

The recipe also called for veggies like zucchini, and low-fat ricotta cheese instead of regular.

The outcome was delicious meal that had the same great taste as higher-calorie lasagna.

The participants also made salad and learned to make their own salad dressings. Many of those attending are also involved in the Community Health’s diabetes prevention program. However, all community members were welcome to participate at no charge, regardless of age or background.

Community Health has many similar events planned in the upcoming future. Next week, Feb. 13, they will host a “No So Fried Bread” workshop.
